Jericho’s years of practice creating experiences hit a dead stop during Covid, a year of self-reflection being a cook, years of cooking food from other cultures, the European French or Italian directions created a dichotomy. The idea that ingredients make good food – not ego – has always been in my quiver. To reach back into my own culture within the context of Canada, and what being a Canadian is. The affordability of physical space went beyond my ability to open a restaurant, so Jericho is now creating experiences outside that model, by bringing the restaurant to you.
